Well, if you have lots of time at hand I would say pressing your own coconut milk is best way to go as you can be sured of quality, freshness and additive free. However, if you don't have the time, the canned version will do. Which brand to buy? There are only a few ones that I allowed in my pantry. 1. Savoy coconut cream: it is so rich andcreamy. I use this one when I cook curry or sweeten sticky rice. 2. Aroy dee: This is a very good coconut milk. it isnot as creamy but work quit well for curry. You can find these 2 brands at the grocery store located on government street in China town area When you get this baby home, don't shake it. You want the cream and milk separate from each other so that when you are ready to make curry, you just have to scoop out the cream from the top to fry the paste and add the rest to make a sauce. And please do not buy light coconut milk. It's un-pleasant! If you want it light, simply dilute it with water or control your portion. ...
